Best practices for adapting mbed to a variant of a supported platform?

General question: Is there any documentation or guide on how to adapt the mbed sdk to a variant of a supported platform (i.e., different pinout than the official platform, different I2C/TWI and SPI peripherals, etc.)

Specific question: Same for a variant of the Nordic nRF52-DK.

Note: I clearly could start with the code for the nRF52-DK and hack config files, etc. But I would like to do this in a maintainable style over mbed releases, therefore would like to do these mods in the official way.
