What are some decent quality speakers to use with mbed?

There is no such thing "decent quality speakers" for mbed. A buzzer is all you can use on pin output. For other needs (power) you must use at least 1 tranzistor, not to mention an amp IC like LM386 .. For maximum quality use the AnalogOut at higher sample rates along with a home system conected on Line IN.

Can you explain further how to connect an existing speaker system to the mbed for sound output?

You need an amplifier. Connect the amplifier input to the mbed and the amplifier output to the speaker.

Small desktop speakers should be enough - 2 to 5 W of power?

If I design my project for small speakers, how difficult would it be to adapt it for larger speakers? Is there a range before it becomes complicated?

The TDA7052A delivers 1W, and is very easy to use. That might be enough.

I've also used the 18W TDA2030A and can recommend that for more power.
